Pininyahang manok literally means 'Pineappled Chicken'. It is made with chicken marinated in pineapple juice and cooked together with several vegetables such as tomatoes, bell peppers, and carrots.

There are several variations of Pininyahang Manok. One main difference is the use of fresh milk rather than coconut milk (also known as gata). Whichever ingredient you choose, you will surely love the taste of Pininyahang Manok

Cooking Ingredients

  • 2 pounds chicken cut into serving size.
  • 12 ounces pineapple chunks, in can.
  • 2 tablespoons cooking oil
  • 2 tablespoons garlic, minced
  • 1 medium sized onion, sliced
  • 2 medium sized tomatoes, chopped
  • 1 cup bell pepper, cut into thick strips
  • 1 medium sized carrot, wedged
  • 2 1/2 tablespoons fish sauce (patis)
  • 1/2 cup fresh milk or coconut milk (gata)

Cooking Instructions

  • Marinate the chicken in the juice of pineapple chunks. Marinate for at least 20 to 30 minutes.
  • Pour the cooking oil in a pot and apply heat.
  • Add garlic, onions, and tomatoes. Saute until onions and tomatoes soften.
  • Put the marinated chicken and cook until the outer skin of the chicken turns to light brown. Save the marinate for later use.
  • Add the marinate and the fresh milk. Bring into a boil.
  • Once boiling, add pineapple chunks.
  • Apply cover and simmer until chicken is tender.
  • Add carrots and mix. Apply cover and simmer until carrots are tender.
  • Add bell pepper and fish sauce. Apply cover and simmer for additional 5 minutes.
